A soon-to-open coffee shop in Griffintown is hoping to bring you all the taste of gourmet coffee with none of the waste.

Le 5ieme will be a zero-waste restaurant where everything will be reusable, from the cups down to the napkins.

“The thing we decided is just not to provide any cup to go because we give the opportunity to someone to make waste,” said owner Dorian Zephir.

A native of France, Zephir moved to Montreal to study engineering. It was only after graduating that he decided to open Le 5ieme with a partner after learning about zero-waste pioneer Bea Johnson. He’s taken the idea to heart, always bringing his own cup when he goes for coffee and refusing the paper napkin. At Le 5ieme, cloth napkins will be provided and the café won’t even provide disposable cups to take coffee to go. Clients who want take out will have to bring their own.

Le 5ieme is scheduled to open in the middle of September.
